2 cups cooked rice
3 cups shredded carrots
2 cups grated cheese
2 beaten eggs
1 ½ tsp salt
¼ tsp pepper
2 tbsp minced onion
½ cup milk

Combine ingredients. Reserve ½ cup cheese.

Put into greased 1 qt casserole. Sprinkle remaining cheese on top. Bake at 350 for 35 to 40 minutes. (Mine took about an hour to cook)
