 2 tbsp chopped green pepper
 ½ cup diced unpeeled apple
 1 tsp salt
 1 tbsp sugar
 ¼ cup vinegar
 3 cups shredded cabbage
 Watercress
 1 cup shredded carrot
 2 slices canned pineapple
1

Combine green pepper, apple, salt, vinegar. Just before serving, shred cabbage and add to other ingredients. Toss together and place in a salad bowl on a bed of watercress and cover with shredded carrots. Top with pineapple slices cut in half.
Yield: Serves 4
