Mix sugar, salt and butter thoroughly in large mixing bowl. Beat eggs and extract into mixture until light and fluffy.
Sift together flour, baking powder, soda, and cinnamon; gradually blend into sugar ingredients. Chill well.
Roll dough 1/8th inch thick on well-floured board. Cut into fancy shapes. Place on ungreased cookie cheese. Bake in 350 degree oven for 8-10 minutes or until brown around the edges. Remove to cooling rack. Decorate with glaze as desired. Store in airtight container.
Yield: 6 to 10 dozen cookies
Blend powdered sugar into egg white. Add melted butter, salt, vanilla extract; beat until smooth. If the glaze is thin, add more sugar. Divide glaze into several parts. Tint as desired with food coloring. Apply the glaze to cookies with a decorating tube or paintbrush.
