2 ripe medium avocados
8 tsp lemon juice
2 tbsp olive oil

Halve chilled avocados; remove seeds and attached membrane. Make grooves in flesh to hasten absorption of dressing.

Mix lemon, salt, cayenne and oil well and divide among 4 halves. Set a half on each salad plate and serve.
