Break leaves from bibb lettuce heads and rinse thoroughly.
Peel and halve avocados; remove seed, slice lengthwise into thin crescent shaped slices. Cut tomatoes into thin wedges. Place lettuce, avocado, and tomato in salad bowl, in layers.
Mix oil, vinegar and mustard in mixing cup. Pour dressing over vegetables at table and trim lightly just before serving. Salt and pepper lightly, to taste.
