Asparagus Fritters - Sexton Cookbook

 2 qts flour
 ¼ cup baking powder
 1 tbsp salt
 2 tbsp sugar
 6 eggs
 1 qt milk

Sift dry ingredients together. Add eggs and milt to make thick batter. Measure with a No. 24 dipper. Brown in deep fat at 375°F.

Apple Fritters - add 1 quart grated apples
Asparagus Fritters - add 1 quart chopped asparagus
Cherry Fritters - add 1 quart unsweetened cherries, drained
Corn Fritters - add 1 quart whole kernel corn, drained
Pineapple Fritters - 1 quart crushed pineapple, drained
Shrimp Fritters - add 8 pounds chopped shrimp, omit sugar
Spinach Fritters - add 1 quart chopped spinach
