From Joys of Jell-O

Tested Recipe!

 1 package yellow cake mix
 3 oz package strawberry, cherry or lime flavored gelatin
 1 cup boiling water
 1 cup cold water
 7 oz coconut, toasted

Prepare cake mix according to package directions; bake in a 15½ by 10½ inch pan lined with wax paper. Cool cake, then trim edges and brush off crumbs. Cut into 2 -inch squares.

Dissolve Jell-O in boiling water; add cold water. Chill until syrupy.

Dip each cake square into gelatin, coating all sides. Then roll in coconut. Chill until firm, preferably overnight.
Will keep for up to a week in the fridge.
